Brussel Sprouts with Oranges


Brussel Sprouts with Oranges – 12 servings (1/2 cup)


1 medium orange

1/4 cup walnuts, coarsely chopped

2 tbsp olive oil, divided

2 shallots, thinly sliced

2 lbs. brussel sprouts, trimmed and halved

1/4 tsp salt

1/4 tsp pepper


Zest the orange and add the zest to a small dish. Peel and section the orange, cutting each section in half, set aside. Add the walnuts to a small skillet and toast over medium heat for 3 minutes or until lightly browned. Remove the walnuts and set aside. In a large skillet over medium high heat, heat 1 tbsp oil. Add the shallots and sauté for 4-5 minutes. Remove the shallots and set aside. Add the remaining oil to the pan and add the sprouts. Saute the sprouts for 10-15 minutes or until browned and cooked through. Add the orange sections, zest and shallots. Cook for 2 minutes. Season sprouts with salt and pepper. Top with walnuts and serve
