Here is a delicious and easy salad recipe to make for this Labor Day weekend.
1 (15 oz) low-sodium black –eyed peas
1 (15 oz) low-sodium black beans (rinsed and drained)
1 (15 oz) no salt corn, drained
½ c onion, chopped
1 bunch green onions, chopped
1 green pepper, chopped
1 pint cherry tomatoes, quartered
1 c cilantro, chopped
1 or 2 chopped jalapeno peppers
1 c Zesty Italian salad dressing
1 avocado, chopped
Combine all ingredients in bowl and refrigerate at least two hours before serving.
Top with avocado before serving.
Enjoy with your favorite tortilla chips or as a side dish.
