Here is a delicious and healthy salad recipe you and your family will love!
Creamy Kale Salad – 4 servings
2 bunches of curtly kale, chopped and stems removed
2 carrots, shredded
1 red bell pepper, seeded and diced
3 radishes, cleaned and thinly sliced
2 tbsp lime juice
2 tsp puréed ginger
1/4 cup almond butter
1/4 cup diced onion
1/4 cup water
2 garlic cloves
2 tsp agave nectar (This is your sweetener. If you don’t have this, please substitute for your taste and amount needed)
1/4 tsp red pepper flakes
1/4 tsp salt
2 tbsp sunflower seeds (raw or roasted)
Place the kale, carrots, bell pepper and radishes in a bowl and toss until mixed. set aside.
In a blender, add the lime juice, ginger, almond butter, onion, water, garlic, agave, red pepper flakes and salt. Process until smooth and creamy.
Pour the dressing over the vegetables and massage into the mixture with very clean hands for 2-3 minutes.
Cover and refrigerate the salad for an hour or two allowing it to rest and absorb the favors.
Garnish with sunflower seeds before serving.
