These blueberry oatmeal bars are YUMMY!!

Blueberry Oatmeal Bars – servings 16

1 ½ cup whole wheat flour

1 cup old-fashioned oats

1/3 cup unsweetened flaked coconut

1/3 cup dark brown sugar

½ tsp cinnamon

¼ tsp salt

½ cup canola oil

2 large egg whites

1 cup blueberries

Preheat oven to 350 degrees. Line a 9 x 9 inch baking pan with parchment paper or aluminum foil, allowing an overhang on sides of pan.

Stir together wheat flour, oats, and coconut, brown sugar, cinnamon and salt until blended. Stir in oil and egg whites until moist dough forms. Reserve 2/3 cup of dough. Press remaining dough in pan until evenly spread.

Smash blueberries in a separate bowl and spread over top of dough. Crumble remaining dough and sprinkle over raspberry layer.

Bake 25-30 minutes or until a golden brown. Let cool in pan 10-15 minutes. Transfer to cooling rack.
