Winter Aromatic Salad

Winter Aromatic Salad

Serves: 4 | Serving Size: 3 cups each serving

1 head of red leaf lettuce
2 cups of raw arugula
1 carrot, sliced thin on mandolin
1 golden beet, sliced thin on mandolin
1/4 cup green onion, sliced thin
1 tablespoon fresh grated ginger
1 small red pepper, sliced thin
2 radishes sliced
2 tablespoons dried pineapple
light spray of vegetable oil such as avocado oil
balsamic vinegar glaze to taste, about 1 tablespoon
optional salt and pepper
The lettuce should be rinsed well and spun dry.
Arrange all ingredients in a salad bowl and toss well.
Arrange on a dinner plate.
Serve immediately.
